1 cup flaked sea salt


Prepare a smoker to cook at 250°F.

If you have a dry-heat smoker, put a water pan in the cooker.

Place the salt in a pie pan or other ovenproof shallow container and place it in the smoker. 

Allow to smoke for 6 to 8 hours, if possible, stirring every hour.

Remove the pan from the smoker and allow to cool completely.

Pour into an airtight container.

Use within 2 weeks for maximum flavour.
