Ingredients:
-
1 cup unsalted butter
-
2 cups granulated sugar
-
4 large eggs
-
1 tablespoon vanilla extract
-
1 cup all-purpose flour
-
1 cup unsweetened cocoa powder
-
1/2 teaspoon salt
-
1 cup semi-sweet chocolate chips
-
1 cup rainbow candy-coated chocolate chips (or mini M&M’s)
For the Ganache:
-
1/2 cup heavy cream
-
1 cup semi-sweet chocolate chips
Instructions:
-
Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it.
-
Melt the butter in a medium saucepan over medium heat. Once melted, remove from heat and stir in the sugar until well combined.
-
In a large bowl, beat the eggs and vanilla extract together. Gradually add the melted butter and sugar mixture, stirring constantly to prevent the eggs from cooking.
-
Sift the flour, cocoa powder, and salt in another bowl. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
-
Fold in the semi-sweet chocolate chips until evenly distributed throughout the batter.
-
Pour the batter into the prepared baking pan, spreading it evenly. Bake for 25-30 minutes or until a toothpick inserted into the centre comes out with a few moist crumbs attached.
-
While the brownies are baking, heat the heavy cream in a small saucepan over medium heat until it begins to simmer. Remove from heat and pour over the chocolate chips in a bowl. Let it sit for a minute, then stir until smooth and glossy.
-
Once the brownies are out of the oven, let them cool slightly. Pour the ganache over the brownies, spreading it evenly. Sprinkle the rainbow candy-coated chocolate chips over the top.
-
Allow the ganache to set at room temperature or in the refrigerator. Once set, cut into squares and enjoy your homemade cosmic brownies.
