Who doesn’t love a sweet treat? Cosmic Brownies are a nostalgic delight. They’re soft, chewy, and loaded with colourful sprinkles. This recipe will help you recreate that beloved childhood favourite at home. You can enjoy these chocolatey bites with just a few simple ingredients anytime.

Ingredients:

  • 1 cup unsalted butter

  • 2 cups granulated sugar

  • 4 large eggs

  • 1 tablespoon vanilla extract

  • 1 cup all-purpose flour

  • 1 cup unsweetened cocoa powder

  • 1/2 teaspoon salt

  • 1 cup semi-sweet chocolate chips

  • 1 cup rainbow candy-coated chocolate chips (or mini M&M’s)

For the Ganache:

  • 1/2 cup heavy cream

  • 1 cup semi-sweet chocolate chips

Instructions:

  1.  Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it.

  2. Melt the butter in a medium saucepan over medium heat. Once melted, remove from heat and stir in the sugar until well combined.

  3.  In a large bowl, beat the eggs and vanilla extract together. Gradually add the melted butter and sugar mixture, stirring constantly to prevent the eggs from cooking.

  4. Sift the flour, cocoa powder, and salt in another bowl. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

  5. Fold in the semi-sweet chocolate chips until evenly distributed throughout the batter.

  6. Pour the batter into the prepared baking pan, spreading it evenly. Bake for 25-30 minutes or until a toothpick inserted into the centre comes out with a few moist crumbs attached.

  7. While the brownies are baking, heat the heavy cream in a small saucepan over medium heat until it begins to simmer. Remove from heat and pour over the chocolate chips in a bowl. Let it sit for a minute, then stir until smooth and glossy.

  8. Once the brownies are out of the oven, let them cool slightly. Pour the ganache over the brownies, spreading it evenly. Sprinkle the rainbow candy-coated chocolate chips over the top.

  9. Allow the ganache to set at room temperature or in the refrigerator. Once set, cut into squares and enjoy your homemade cosmic brownies.
