Mango Pico de Gallo is a vibrant twist on a classic salsa. This refreshing dish combines ripe mangoes with fresh vegetables. It’s perfect for summer gatherings or as a zesty topping for tacos.

Ingredients:

  • 2 ripe mangos, peeled and diced
  • 1 medium red onion, finely diced
  • 1-2 jalapeños, seeded and finely chopped (adjust to taste)
  • 1 red bell pepper, finely diced
  • 1/2 cup fresh cilantro, chopped
  • 2-3 limes, juiced
  • Salt, to taste

Instructions:

  • Peel and dice the mangos, ensuring you remove the seed. Finely dice the red onion, jalapeños, and red bell pepper. Chop the cilantro.
  • Combine the diced mangos, red onion, jalapeños, red bell pepper, and cilantro in a large bowl.
  • Squeeze the lime juice over the mixture and add salt to taste. Mix everything well until combined.
  • Taste the pico de gallo and adjust the seasoning by adding more lime juice or salt if needed.
  • For the best flavour, let the pico de gallo chill in the refrigerator for at least 30 minutes before serving.
