Ingredients
  

  • 2 ripe mangos, peeled and diced
  • 1 medium red onion, finely diced
  • 1-2 jalapeños, seeded and finely chopped (adjust to taste)
  • 1 red bell pepper, finely diced
  • 1/2 cup fresh cilantro, chopped
  • 2-3 limes, juiced
  • Salt, to taste

Method
 

  1. Peel and dice the mangos, ensuring you remove the seed. Finely dice the red onion, jalapeños, and red bell pepper. Chop the cilantro.
  2. Combine the diced mangos, red onion, jalapeños, red bell pepper, and cilantro in a large bowl.
  3. Squeeze the lime juice over the mixture and add salt to taste. Mix everything well until combined.
  4. Taste the pico de gallo and adjust the seasoning by adding more lime juice or salt if needed.
  5. For the best flavour, let the pico de gallo chill in the refrigerator for at least 30 minutes before serving.
