Ingredients:
- 1 (15 1/4 ounce) can whole kernel corn, drained
- 1 (14 3/4 ounce) can cream-style corn
- 1 (8 oz) package corn muffin mix (Jiffy recommended)
- 1 cup sour cream
- 1/2 cup (1 stick) melted butter
- 1 cup medium shredded cheddar cheese
Instructions:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, stir together the two cans of corn, corn muffin mix, sour cream, and melted butter.
- Pour the mixture into a greased casserole dish.
- Bake at 350°F for 40 to 45 minutes, or until golden brown.
- Remove from the oven and top with a generous amount of cheddar cheese.
- Return to the oven for another 5 minutes, or until the cheese is melted.
- Let stand for at least 5 minutes before serving.
Tips:
You can also make this recipe in a Crock Pot. Combine all ingredients except for the cheddar cheese in a lightly greased Crock Pot. Cook on high for 2-3 hours or on low for 4-5 hours. Add the shredded cheddar cheese during the last 20 minutes of cooking.
For a richer flavour, you can use buttermilk instead of sour cream.
You can also add other ingredients to this casserole, such as chopped green chillies, diced ham, or crumbled cooked bacon.
