Take your taste buds on a journey to Turkey with our genuine Adana Kebab recipe. This dish, from Adana, is a mix of flavours and spices that will make you want more.
Ingredients:
1 pound ground lamb (or a mixture of lamb and beef)
1 large onion, finely grated
2 cloves garlic, minced
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon red pepper flakes (adjust to taste)
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
1/4 cup warm water
Instructions:
- Combine the ground lamb, grated onion, minced garlic, cumin, coriander, red pepper flakes, salt, and pepper in a large bowl.
- Use your hands to knead the mixture until it’s well combined and slightly sticky.
- Gradually add the warm water, kneading until the mixture becomes cohesive but not too wet.
- Divide the mixture into equal portions into long, flat cylinders.
- Thread each cylinder onto a flat metal skewer.
- Grill the kebabs over high heat for 8-10 minutes per side, or until cooked through and slightly charred.
- Serve immediately
Useful Tips:
For a spicier kebab, increase the amount of red pepper flakes.
If you don’t have a flat metal skewer, you can use a long, thin metal skewer and flatten the meat around it.
What to serve with the kabab?
- Classic side dishes for kebabs often include soft Turkish rice or bulgur, which help balance the spicy kebab. Grilled veggies like tomatoes, peppers, and onions add a smoky flavour.
- A cool shepherd’s salad with tomatoes, cucumbers, onions, and parsley, dressed with olive oil and lemon juice, cleanses the taste buds.
- A creamy yoghurt dip, such as cacık or tzatziki, contrasts the kebab’s spiciness. For a full meal, serve warm, freshly baked flatbreads and a sweet pomegranate molasses drizzle
