Turkish Adana Kebab Recipe

Ingredients:

1 pound ground lamb (or a mixture of lamb and beef)

1 large onion, finely grated

2 cloves garlic, minced

1 teaspoon ground cumin

1/2 teaspoon ground coriander

1/2 teaspoon red pepper flakes (adjust to taste)

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

1/4 cup warm water

Instructions:

  •  Combine the ground lamb, grated onion, minced garlic, cumin, coriander, red pepper flakes, salt, and pepper in a large bowl.
  • Use your hands to knead the mixture until it’s well combined and slightly sticky.
  •  Gradually add the warm water, kneading until the mixture becomes cohesive but not too wet.
  •  Divide the mixture into equal portions into long, flat cylinders.
  • Thread each cylinder onto a flat metal skewer.
  •  Grill the kebabs over high heat for 8-10 minutes per side, or until cooked through and slightly charred.
  • Serve immediately

Useful Tips:

For a spicier kebab, increase the amount of red pepper flakes.

If you don’t have a flat metal skewer, you can use a long, thin metal skewer and flatten the meat around it.
