Ingredients:
- 1 pound boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- 8 ounces dried lo mein noodles
- 2 tbsp vegetable oil
For the Sauce:
- 3 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- ¼ cup chicken broth
- 1 tbsp brown sugar
- ½ tsp cornstarch
For the Stir-Fry:
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 1 red bell pepper, sliced (optional)
- 1 cup broccoli florets
- ½ cup snow peas
- 1 1 onion, sliced (optional)
- 4 scallions, sliced (white and green parts)
- Salt and freshly ground black pepper to taste
Marinate the chicken: In a bowl, combine the chicken with 1 tablespoon of soy sauce, 1/2 teaspoon of cornstarch, and a pinch of pepper. Let marinate for 15 minutes while you prepare the other ingredients.
Cook the noodles:Bring a large pot of salted water to a boil. Cook the lo mein noodles according to package instructions, usually for 3-4 minutes, or until al dente. Drain the noodles and rinse under cold water to stop them from cooking further. Toss with 1 teaspoon of sesame oil to prevent sticking. Make the sauce:In a small bowl, whisk together the remaining soy sauce, oyster sauce (if using), rice vinegar, brown sugar, sesame oil, cornstarch, and chicken broth. Stir-fry the chicken and vegetables:Heat the vegetable oil in a wok or large skillet over high heat. Add the chicken and cook for 4-5 minutes or until golden brown and cooked through. Remove the chicken from the pan and set aside.Add the garlic and ginger to the pan and cook for 30 seconds, or until fragrant. Add the onion and bell pepper (if using) and cook for another minute, until softened slightly.Add the broccoli and snow peas to the pan and cook for 2-3 minutes, or until tender-crisp. Assemble the lo mein:Add the cooked noodles and chicken back to the pan. Pour in the sauce and toss everything together to coat.Garnish with sliced scallions and serve immediately
