Ingredients
  

  • 2 cups of garlic cloves (peeled)
  • 1 cup of (black) rice vinegar
  • 1 cup of water
  • 1/2 cup of sugar
  • 1 tablespoon of salt

  • Start by peeling the garlic cloves. It’s essential to use fresh garlic for the best flavour.
  • Sterilize your glass jars by boiling them in water for about 10 minutes. This step ensures that your pickles will be stored safely.
  • In a saucepan, combine the rice vinegar, water, sugar, and salt. Heat the mixture over medium heat and stir until the sugar and salt are fully dissolved. Allow the brine to cool to room temperature.
  • Place the peeled garlic cloves into the sterilized jars. Pour the cooled brine over the garlic, ensuring all cloves are submerged. Seal the jars tightly.
  • Store the jars in a cool, dark place for at least one week. For a more intense flavour, you can let them marinate for up to a month.
  • Store the jars in the refrigerator once the garlic is pickled to your liking. Enjoy your Chinese Pickled Garlic as a flavourful addition to salads, and stir-fries, or as a tangy snack!
