Begin by placing the cottage cheese in a blender or food processor. Blend until smooth and creamy, ensuring there are no lumps.
In a mixing bowl, combine the powdered sugar, unsweetened cocoa powder, and a pinch of salt. Mix well.
Add the melted butter and vanilla extract to the dry ingredients. Stir until fully incorporated.
Fold in the smooth cottage cheese mixture. If you enjoy a bit of crunch, you can also add the chopped nuts at this stage.
Line a square baking dish with parchment paper or lightly grease it. Pour the fudge mixture into the dish, spreading it evenly with a spatula.
Place the dish in the refrigerator for at least 2 hours, or until the fudge is firm to the touch.
Once set, remove the fudge from the refrigerator and cut it into squares.
