Method
- Bring the water to a boil in a small pot.
- Once boiling, add the sliced ginger and let it simmer for about 10 minutes.
- Remove the pot from heat and strain the tea to remove the ginger slices.
- Add the fresh lemon juice and honey. Stir well until the honey dissolves.
- Pour the tea into a cup, and add a lemon slice and fresh mint if desired.
