Homemade Fresh Spring Rolls Recipe

Ingredients
  

  • 3 cups shredded coleslaw mix
  • ½ cup fresh cilantro leaves
  • 1 tbsp diced scallion
  • 8 rice papers
  • 8 ounces lean Pulled Pork

Method
 

  1. In a large mixing bowl, toss the coleslaw mix, cilantro leaves, and scallion to combine. Fill a bowl larger than the diameter of the rice paper with cool water.
  2. Dip 1 sheet of rice paper in the cool water for about 30 to 45 seconds, until it is just pliable. Place the wrapper on a flat surface, add about ⅓ cup of the coleslaw mix, roll the edge over and pull back toward you to tighten.
  3. Add 1 ounce of the pulled pork, fold both ends over the filled sections, and then continue to wrap it tightly. Place the seam side down on a plate and cut it in half.
  4. Repeat with the remaining wrappers and filling
  5. Serve with Balsamic Sauce.
