Method 1: Using a blender or food processor
- Peel the garlic cloves. You can also remove the green germ in the centre for a milder flavour, but it’s optional.
- Add the garlic cloves to your blender or food processor.
- Blend with oil (optional): Add a tablespoon of olive oil for a smoother consistency. You can use water instead of oil, but oil helps prevent browning.
- Blend until you get a smooth paste. Scrape down the sides as needed.
Method 2: Using a mortar and pestle (traditional method)
- Peel the garlic cloves.
- Grind the garlic: Add a few cloves of garlic to your mortar and start grinding with the pestle. Add more cloves as needed and continue grinding until you get a smooth paste. This method takes more effort but can be more flavorful.
