Rinse the chicken thighs under cold water and pat them dry. Season with salt, pepper, and any other desired seasonings.
Fill a large pot with water, enough to cover the chicken thighs. Bring the water to a boil.
Once the water is boiling, carefully add the chicken thighs.
Reduce the heat to a simmer. Let the chicken cook for about 30 minutes or until fully cooked. You can check if they’re done by cutting into one of the thighs to see if the meat is no longer pink and the juices run clear, or use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).
Remove the chicken thighs from the pot and let them rest for a few minutes
