Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 2 tbsp lemon zest (from about 2 lemons)
  • 2 tbsp fresh lemon juice
  • ½ tsp baking powder
  • ¼ tsp salt

For the Glaze

  • 1 cup powdered sugar
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease and line an 8×8 inch baking dish with parchment paper, leaving some overhang for easy removal.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add the eggs, one at a time, beating well after each addition.
  • Mix in the lemon zest and lemon juice until well incorporated.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  • Spread the batter evenly into the prepared baking dish.
  • Bake for 20-25 minutes, or until a toothpick inserted into the centre comes out clean.
  • Allow the brownies to cool completely in the baking dish on a wire rack.

For the Glaze:

  • In a small bowl, whisk together the powdered sugar, lemon juice, and lemon zest until smooth.
  • Once the brownies are completely cooled, spread the glaze evenly over the top.
  • Allow the glaze to set before cutting into squares.
