In a small saucepan, combine strawberries, sugar, and lemon juice.
Cook over medium heat for 5–7 minutes, stirring occasionally, until strawberries soften and release juices.
(For a raw version, skip cooking and blend directly.)
Blend: Transfer the mixture to a blender or food processor and blend until smooth.
Add a little water (1–2 tbsp) if too thick for the desired consistency.
Strain (Optional): For a seed-free puree, strain through a fine-mesh sieve, pressing with a spoon.
Cool & Store: Let it cool before using. Store in an airtight container in the fridge for up to 5 days or freeze for longer storage.
