- Prepare the Chicken:In a bowl, combine cornstarch, flour, salt, and pepper. In another bowl, beat the egg. Dip each piece of chicken in the egg, then dredge in the flour mixture, ensuring it’s fully coated.
- Fry the Chicken:Heat vegetable oil in a large skillet or Dutch oven over medium-high heat (around 350°F/175°C). Fry the chicken in batches, being careful not to overcrowd the pan. Cook until golden brown and crispy, about 3-5 minutes per side. Remove the chicken and place it on a wire rack lined with paper towels to drain excess oil.
- Make the Sauce:In a medium saucepan, whisk together orange juice, soy sauce, rice vinegar, brown sugar, cornstarch, orange zest, ginger, garlic, and red pepper flakes (if using). Bring the mixture to a simmer over medium heat, stirring constantly, until the sauce thickens (about 2-3 minutes).
- Combine Chicken and Sauce:Add the fried chicken to the sauce and toss to coat evenly.
- Serve immediately over cooked rice or noodles. Garnish with chopped green onions or sesame seeds, if desired.
