Ingredients:
4 boneless, skinless chicken breasts
1 cup bread crumbs
1/2 cup grated Parmesan cheese
1 teaspoon dried Italian seasoning
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 eggs, beaten
Cooking spray
Instructions:
Preheat the oven to 400°F (200°C). Line a baking sheet with aluminium foil and lightly coat it with cooking spray.
In a bowl, combine the bread crumbs, Parmesan cheese, Italian seasoning, garlic powder, salt, and black pepper.
Dip each chicken breast into the beaten eggs, letting any excess drip off.
Press each chicken breast into the breadcrumb mixture, coating it well on both sides. Place the coated chicken breasts onto the prepared baking sheet.
Lightly spray the tops of the chicken breasts with cooking spray to help them brown.
Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the coating is crispy and golden brown.
Remove from the oven and let the chicken cutlets rest for a few minutes before serving.
Serve the baked chicken cutlets with your choice of side dishes, such as steamed vegetables, mashed potatoes, or a salad.
