Ingredients:

  • 1 pound beef brisket, cut into small pieces
  • 1 large Korean radish (or daikon), peeled and sliced into bite-sized pieces
  • 7 cups water
  • 1 tablespoon fish sauce (or soup soy sauce)
  • 1 teaspoon kosher salt
  • 3 cloves garlic, minced
  • 2 green onions, sliced thinly
  • 1 tablespoon sesame oil
  • 1 teaspoon sesame seeds (optional)

Instructions:

Prepare the Beef and Radish:

  • In a large pot, add the beef pieces and water. Bring to a boil over medium-high heat.
  • Once boiling, reduce the heat to medium and add the sliced radish. Cook for about 15 minutes.
  • Add the minced garlic, fish sauce, and kosher salt to the pot. Simmer for another 25 minutes, or until the beef is tender.

Finish and Serve:

  • Stir in the sesame oil and sliced green onions. Cook for an additional 5 minutes.
  • Remove from heat and ladle the soup into bowls. Sprinkle with sesame seeds if desired.
