There’s nothing better than a homemade syrup that makes your morning coffee taste like it came from a café. This brown sugar cinnamon syrup is sweet, warm, and takes just a few minutes to whip up. Perfect for lattes, pancakes, or drizzling over oatmeal.

Ingredients:

  • 1 cup brown sugar (light or dark)

  • 1 cup water

  • 2 cinnamon sticks (or 1 ½ tsp ground cinnamon)

  • 1 tsp vanilla extract (optional, but adds warmth)

  • Pinch of salt (balances sweetness)

Instructions:

  1. In a small saucepan, combine the brown sugar, water, and cinnamon sticks.

  2. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves.

  3. Lower the heat and let it simmer for 5–7 minutes, allowing the cinnamon to infuse.

  4. Remove from heat. Stir in vanilla extract and a pinch of salt.

  5. Let it cool slightly, then strain out the cinnamon sticks (if using).

  6. Store in a glass jar or bottle in the fridge for up to 2 weeks.

Use it for:

  • Lattes or iced coffee (like a homemade Starbucks-style syrup).

  • Drizzling over French toast, pancakes, or waffles.

  • Stirring into oatmeal or yoghurt.

  • Mixing into bourbon or rum cocktails for a spiced sweetness.
