Cowboy Spaghetti is a popular and hearty version of the classic Italian dish that is loved by cowboys and cowgirls alike. It combines traditional Italian flavours with a touch of the Wild West and has become a staple in many American households due to its simplicity and heartiness.

Ingredients:

  • 1 pound spaghetti
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped (optional)
  • 1 (15-ounce) can of kidney beans, rinsed and drained
  • 1 (15-ounce) can tomato sauce
  • 1 (10-ounce) can diced tomatoes and green chillies (such as Rotel)
  • 2 tablespoons chili powder
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 cups shredded cheddar cheese

Instructions:

  1. Prepare the spaghetti according to package directions; drain.
  2. Brown the ground beef in a large skillet or Dutch oven over medium-high heat. Drain any excess grease. Add the chopped onion (and green bell pepper, if using) and cook until softened.
  3.  Stir in the kidney beans, tomato sauce, diced tomatoes with green chillies, chilli powder, Worcestershire sauce, cumin, garlic powder, salt, and pepper. Bring to a simmer and cook for 10-15 minutes, stirring occasionally.
  4.  Stir in the cooked spaghetti and half of the shredded cheddar cheese. Transfer the mixture to a greased 9×13-inch baking dish. Top with the remaining cheddar cheese.
  5. Bake in a preheated oven at 375°F (190°C) for 15-20 minutes, or until the cheese is melted and bubbly.

Tips & Variations:

  • Add bacon: Cook some chopped bacon at the beginning and use the bacon grease to cook the beef.
  • Spice it up: Add a pinch of cayenne pepper, red pepper flakes, or your favourite hot sauce for a kick.
  • Change the cheese: Experiment with different cheeses like Monterey Jack, Colby Jack, or even mozzarella.
  • Make it creamy: Stir in a bit of cream cheese or sour cream near the end for extra richness.
  • Veggie boost: Include other veggies like corn, mushrooms, or sliced olives.
