Whether you’re feeding a hungry crowd, meal prepping for the week, or just craving some old-fashioned comfort food, this easy Cowboy Stew recipe delivers bold flavours with minimal fuss.

Ingredients:

  • 1 lb ground beef (or ground turkey)

  • 1 lb smoked sausage (kielbasa or andouille), sliced

  • 1 medium onion, diced

  • 1 bell pepper, diced

  • 3 cloves garlic, minced

  • 1 (15 oz) can diced tomatoes (undrained)

  • 1 (15 oz) can tomato sauce

  • 1 (15 oz) can corn, drained

  • 1 (15 oz) can black beans, drained & rinsed

  • 1 (15 oz) can pinto beans, drained & rinsed

  • 1 (15 oz) can green beans, drained

  • 1 (4 oz) can diced green chiles (optional for heat)

  • 3 cups beef broth (or water + bouillon)

  • 2 medium potatoes, peeled & diced (optional)

  • 1 tbsp Worcestershire sauce

  • 1 tsp chilli powder

  • 1 tsp cumin

  • 1 tsp paprika

  • ½ tsp black pepper

  • ½ tsp salt (adjust to taste)

  • 2 tbsp olive oil

Instructions:

  1. Brown the Meat: In a large pot or Dutch oven, heat olive oil over medium-high heat. Add ground beef and sausage, breaking it up as it cooks until browned (about 5-7 mins). Drain excess fat if needed.

  2. Sauté Veggies: Add onion, bell pepper, and garlic. Cook until softened (about 3-4 mins).

  3. Add Liquids & Seasonings: Stir in diced tomatoes, tomato sauce, beef broth, Worcestershire sauce, and all spices. Bring to a simmer.

  4. Add Beans & Potatoes: Stir in all beans, corn, green chiles (if using), and diced potatoes. Mix well.

  5. Simmer: Reduce heat to low, cover, and let simmer for 30-40 mins, stirring occasionally, until potatoes are tender.

  6. Adjust Seasoning: Taste and add more salt, pepper, or spices if needed.

  7. Serve: Ladle into bowls and enjoy with cornbread, crackers, or a sprinkle of shredded cheese on top.

Variations:

  • Spicier? Add a diced jalapeño or cayenne pepper.

  • Slow Cooker Option: Brown meat first, then add everything to a crockpot and cook on Low 6-8 hrs or High 3-4 hrs.

  • Extra Hearty? Add diced carrots or sweet potatoes.
