Ingredients
3 cups shredded coleslaw mix (shredded green and purple cabbage, shredded carrots)
½ cup fresh cilantro leaves
1 tablespoon diced scallion
8 to 10 rice papers (spring roll wrappers)
8 ounces lean Pulled Pork, room temperature or slightly warm
Directions
Make spring rolls
In a large mixing bowl, toss the coleslaw mix, cilantro leaves, and scallion to combine. Fill a bowl larger than the diameter of the rice paper with cool water.
Dip 1 sheet of rice paper in the cool water for about 30 to 45 seconds, until it is just pliable. Place the wrapper on a flat surface, add about ⅓ cup of the coleslaw mix, roll the edge over and pull back toward you to tighten.
Add 1 ounce of the pulled pork, fold both ends over the filled sections, and then continue to wrap it tightly. Place the seam side down on a plate and cut it in half.
Repeat with the remaining wrappers and filling. Serve with Balsamic Sauce or any other sauce of your choice.
